Hey, I can’t be the only one who seems to love vegetables more in the summer, right? I mean, winter rolls around and all I want is bread and chocolate. When the weather warms, however, I crave the freshness and coolness of vegetables (and fruit, too).

Give me a good salad any day – the more there is in it, the better. A few weeks ago, I needed something to eat that was fast and satisfied that need for a meal that felt refreshing. Thankfully, I had just enough in the kitchen to make one of my go-to summer favourites – a Bean, Chickpea, and Corn Salad with cucumber, red peppers, red onion, and a simple, homemade dressing.
What’s your favourite salad recipe?
Bean, Chickpea, and Corn Summer Salad
- 1 can black beans
- 1 can chickpeas
- 1 can corn kernels
- 1/2 regular sized cucumber, chopped
- 1 red pepper, chopped
- 1/2 red onion, chopped
- 1/4 cup olive oil
- 2 tbsp lemon or lime juice
- 1 tsp vinegar
- Salt and pepper, to taste
- Add all ingredients to a bowl and stir to combine.
- Mix together all ingredients and add to salad bowl. Toss to coat.
Optional: Add avocado for extra flavour and texture.
