Dessert is something I’m almost constantly craving. Coated in chocolate, line with chocolate, next to chocolate – as long as chocolate is involved in some form, I’m there for it. Whenever I bake anything, the first thing I ask myself is, “Can I get chocolate in this without ruining it?” Afterall, I’m a chocolate snob (in that I eat it and judge those who don’t), but I wouldn’t dare use it in a recipe that it absolutely wouldn’t suit.
You know, whenever I share a recipe with my readers, rather than thinking about the food itself, I’m always more concerned with what I’m going to say that will ultimately lead to the detailed instructions. In this case, as I whisked the dry ingredients, blended the wet ingredients, and combined the two to put into muffin tins, I was also jumping back and forth between Instagram and the original recipe for these pumpkin muffins.
If you’ve been here for a while, you’ll know, and likely understand, how madly in love I am with coffee. It’s a Shakespearean kind of love – that is to say, it’s romantic and complicated and beautiful. Therefore, #NationalCoffeeDay is sort of a religious experience for me.
For those unaware, September 29th is National Coffee Day (I’m checking to see if it’s recognized as a statutory holiday because there is no day of greater importance to us as a society). When my friends at Keurig reached out to me, they told me that they’ve decided (and I’m completely on board with this) to extend the celebration by dedicating an entire month to the thing that keeps us all from falling apart. I mean, hello? My body is 40% water, 10% sarcasm, and a good 50% caffeine. This celebration was made for me.
I’m not going to sit here and tell you that smoothies like this 3-Ingredient Piña Colada Smoothie are a regular part of my diet and that each morning I wake up, blend together some green stuff, some yellow stuff, etc. with some almond milk and feel the nutrients rush through me like a burst dam. Most days, my breakfast is 3 cups of coffee and a ton of rush-rush-rush. I’d love to be the person who downs smoothies to kill their addiction craving to chocolate covered almonds. But come on, you know that’s not me.
